In the book you’ll find completely new types of layer upon layer combinations such as caramelized artichokes with fried onions and crispy seaweed bacon. Or, baked celery and pumpkin.
And be assured, all the classics are here: plant-based herring of eggplant or oyster mushrooms, ‘fish’ fillets of breaded parsnips and warm mushroom pâtés with sour and crunch on top. The ‘salmon’ is made from marinated carrots, and of course there is also a nice tartar dish of beetroot with green garnish.
